Because it was the earliest winery in Taiwan to produce Kaoliang liquor, Chiayi has the nickname "Hometown of Baijiu." In 1916, Japanese Akashi Hatsutaro established the Taisho Brewing Co., Ltd. Chiayi Factory here. In 1922, due to the implementation of the monopoly system, the factory was requisitioned, and the Chiayi Factory was transferred to the Monopoly Bureau's Tainan Branch. After Taiwan's retrocession, the Nationalist government continued the monopoly system, and in 1957, it was renamed "Taiwan Provincial Tobacco and Liquor Monopoly Bureau Chiayi Branch Chiayi Winery." Chiayi Winery was relocated to the Minxiong Industrial Park in 1982. After the relocation, a large amount of production machinery and related equipment were left behind, including bottle washing machines, wine storage barrels, bottle conveyor belts, chimneys, sorghum storage tanks, and weighing scales, all of which are precious witnesses to the brewing culture. Among them, seven buildings are designated as municipal historical sites, and the boiler chimney, which was once as high as fifty-three meters, was one of the early landmarks of Chiayi City. The site underwent restoration and reuse by the Ministry of Culture, completed in 2013, and was planned as the Chiayi Cultural and Creative Industries Park.
