Mr. Lin says many people assume his restaurant, named Yamamoto, is a Japanese restaurant. Actually, it's in honor of a Japanese chef who once taught him. Besides Japanese cuisine, he is proficient in a wide variety of dishes, including Hakka, Minnan, and Zhejiang cuisines.
