Their ba-wan are made with glutinous rice, rice flour, and sweet potato starch, steamed first and then deep-fried to achieve a chewy texture. The filling uses fresh pork with a higher proportion of lean meat. It is said that to maintain quality, lard is refined from pork plate fat, which gives it that old-fashioned lard aroma. Despite being a budget-friendly delicacy, it requires so much effort, no wonder it has consistently won the affection of Nantou locals.
