Mainaise was originally a famous local "Ailermeng Bar" in Hsinchu. American military advisors who patronized the bar were captivated by the owner's Western-style desserts. Later, the owner simply switched to specializing in Western pastries, becoming Hsinchu's first Western-style bakery during a time of scarcity. However, what is deeply ingrained in the hearts of Hsinchu residents is not just Western bread. Even more noteworthy are the various braised dishes and the number one ranked Osmanthus Salted Duck that were introduced later, gradually becoming one of Mainaise's signature items. No wonder it's called a "braised food shop" that also happens to sell bread!
