San Chang Zhajiang Noodles was originally opened by retired soldier Grandpa Kang in 1987. In 2007, due to market demolition, it relocated to its current address, transforming from a small market noodle stall into a bright noodle shop. Grandpa Kang, originally from mainland China, passed down his culinary skills to the current owner, who upholds the traditional method for making Zhajiang Noodles, preserving the classic military dependents' village flavors of preserved mustard greens and pickled vegetables. The sauce is very unique, not overly salty, and the texture of the noodles is perfectly controlled, making it a favorite for many even today. It's always crowded during meal times, and the best part is that all the prices are pocket-friendly! Order a bowl of fragrant noodles, add a soft-boiled egg, and mix it thoroughly with the Zhajiang sauce, making a delicious bowl of Zhajiang noodles even smoother and tastier.
