Her friends, wanting to help her get back on her feet and find purpose, suggested opening a coffee shop. This marked the beginning of her journey with coffee, and as a Christian, she firmly believes it was God opening another window for her. "I find coffee fascinating and have gradually developed my skills," Huang Hui-Xue says, her words revealing her deep interest in researching coffee. Indeed, her proudest creation, cold brew coffee, was born from this "playful" approach – unable to afford expensive equipment, she used an IV drip set with the same principle. By experimenting with different drip speeds and water qualities, she created cold brew coffee with varying tastes in each cup. "Paired with the handmade banana brownies or passion fruit pound cake in the shop, it's a great enjoyment," Huang Hui-Xue says confidently. In addition to cold brew coffee, the shop also features "hand-drip coffee," where the equipment is brought directly to the customer's table for freshly brewed service. Different techniques are used to bring out the coffee's flavor according to the customer's preference for strength. The coffee beans used in the shop are also roasted in-house and carefully selected by Hui-Xue. Huang Hui-Xue is also the first Q Grader in Chiayi. With her passion for coffee and her gifted palate, she has continuously learned, explored, and humbly sought knowledge.
