Ms. Wu Jin-xia, the founder of "A-Xia Restaurant," was unable to continue her education due to family financial reasons. She began helping at her father's "fan zhuo zai" (small eatery), supporting the family and nurturing her younger siblings. After the war, she relocated to the Central Market, near the current Guohua Building, selling deep-fried meat dumplings, large intestines, small intestines, and shrimp rolls. Due to its prime location and delicious flavors, the eatery gradually gained recognition, and many prominent political figures in Tainan became regular customers. In 1983, the restaurant moved to its current location and was officially named "A-Xia Restaurant." At that time, it became widely famous throughout Taiwan after being visited by the late President Chiang Ching-kuo, subsequently becoming a must-visit destination for future Taiwanese presidents, political figures, and entertainment celebrities when they came to Tainan.
