The soup base of the Claypot Duck is made from pork bones, and then the napa cabbage is placed in the pot and stewed until thoroughly tender. Then, a medium-sized tender duck weighing about three and a half catties is selected, lightly fried, and then placed in a clay pot with ingredients such as tofu, shredded pork, dried flatfish, quail eggs, straw mushrooms, and daylilies. It is then simmered over low heat for about 2 hours to complete.
