The first generation, Mr. Chen Qingji, sold milk at a ranch opposite the current Zhongyi Elementary School during the Japanese colonial era. The second generation, Mr. Chen Benchang, the founder of Gan Ben Tang, opened a Japanese-style wagashi shop with Mr. Hidekazu Takan, a Japanese master, on Dashishi Street (now Min Sheng Road Section 1) in Tainan. The shop was named 'Gan Ben Tang' using one character from each of their names. The third generation, his second son Mr. Chen Maoxiong, inherited the business and transformed Gan Ben Tang into a Western-style pastry and bread shop. In 2006, the fourth generation, Mr. Chen Yizhang, and his wife, Ms. Xie Yilun, continued the operation. Mr. Chen Yizhang also studied wagashi making techniques in Japan. Before taking over his father's business, he worked in several five-star hotels in Taipei, bringing together skills from Taiwan, Japan, past, and present. Since taking over Gan Ben Tang, he has been dedicated to maintaining traditional flavors while continuously developing new products to adapt to the changing times and bring new life to the old shop.
