Aizai Cheng Shrimp Rice originated in 1922. The first-generation owner, Ye Cheng, learned his craft at the Japanese restaurant "Mingyue Lou" during the Japanese colonial era. He later started his own Japanese cuisine stall, developing a unique and delicious shrimp rice based on Japanese flavors. He set up his stall in the Ximen Market at the time. After several relocations, he rose to prominence on the roadside in what is now known as Zhongzheng Road and Hai'an Road in the Shinmachi area.
