The shrimp roll, a type of snack, was brought to Taiwan by Fuzhou soldiers who accompanied Koxinga during the Zheng dynasty. At that time, it was called 'meat roll' and was made by wrapping cabbage, salted duck eggs, and minced meat in pork peritoneum. During the Japanese colonial era, influenced by the extensive development of fishing ports by the Japanese, shrimp became readily available. Shrimp was used to replace pork, and the dish was improved into a shrimp roll. Over fifty years ago, at the age of 26, Mr. Huang Jin-shui apprenticed under the 70-year-old master craftsman Wu Ba-si, and after achieving mastery, he took over the business, selling only two snacks: shrimp rolls and shrimp dumplings. At that time, the business was located at Shi Jing Jiou on Minzu Road, a famous snack hub in the ancient capital. Due to the demolition of the Minzu Road night market, it was forced to relocate to the Guangfu Market on Chenggong Road, commonly known as the Ya Mu Liao Market. It has now moved to its current location. After his father's fifty years of operation, Mr. Huang Da-wei officially took over in 1999.
