The fish meat is mashed into a paste, lightly seasoned, then shaped into balls and dropped into boiling water. They float to the surface when cooked, hence the name "floating fish balls." The broth from cooking the fish balls is thickened with sweet potato starch to create a clear, sweet, and delicious soup. A-Feng's floating fish balls are filled with milkfish, with no bones or thorns. The fish paste is made from milkfish, mixed with cilantro, ginger shreds, and black vinegar, giving it a uniquely fresh and delicious flavor.
