Pingtung meatballs have a thicker skin and diced meat filling, while Fu Ji meatballs use whole pieces of meat (traditional Tainan shrimp meatballs use minced pork!). They are made by marinating raw meat in sauce before wrapping it in the meatball skin and steaming it directly. To ensure the larger pieces of meat are cooked through, the steaming time is longer, resulting in a slightly softer meatball skin than usual, with a distinct meaty aroma! Fu Ji's dipping sauce was also specially developed by owner Mr. Jiang to complement Fu Ji meatballs. It's primarily made from a blend of sugar, soy sauce, ketchup, and fermented bean curd, unlike ordinary soy sauce. The owner also emphasizes that 'the deliciousness of Fu Ji meatballs lies in the overall flavor created by the combination of the meatballs, sauce, and bone broth!'
