Hailong Zongzi. The founder of "Hailong Zongzi", Xin Haishu, returned home from the Philippines after serving as a "Japanese soldier" at the age of 20, and then began selling zongzi and vegetable zongzi at the traditional market in Tainan's Shuixian Temple. Because everyone called him "Hailongzai", he named the shop "Hailong Zongzi". Hailong Zongzi places stir-fried minced pork, raw rice, meat chunks, salted duck egg yolks, shiitake mushrooms, and peanuts into bamboo leaves, tightly wrapping them. Except for the minced pork, everything else is raw. The zongzi are boiled in water, with water added continuously during the cooking process. After 2 hours of boiling, delicious Hailong Zongzi are made. The owner of Hailong Zongzi stated that their zongzi "can be eaten often without causing heartburn because the glutinous rice is drained immediately after washing, which not only reduces stomach acid secretion but also increases the chewy texture of the zongzi."
