Jing Xuan. A small eatery in an alley, specializing in ramen and rice bowls. A small eatery in an alley, specializing in ramen and rice bowls. We use local rice from eastern Taiwan, adding Binchotan charcoal to the rice cooker to make the grains fragrant and chewy, while also removing pesticide residues, chlorine, and adding natural minerals. Our ramen comes from sunny Pingtung, with a firm and springy texture. In addition to rice bowls and ramen, the chef has thoughtfully designed the "Genki Meal," a mini combination of a rice bowl and ramen, offering a double delight in one meal, and it's a popular dish in the restaurant. Ramen (set meal) starts from NT$140, rice bowls (set meal) start from NT$140, and Genki Meals (set) start from NT$170. Blackboard Specials — The limited daily specials on the wall are the reference menu for savvy regulars. These dishes are prepared by the chef using fresh ingredients bought from the market in the morning and seasonal local produce. The chef decides the menu based on the ingredients available that day, and the quantity is limited, adding a touch of fate between people and food, which cannot be forced. The blackboard menu changes frequently, adding richness and variety to the dishes, while also satisfying customers' desire for new flavors.
