Dong Mao Restaurant has been open for over 20 years. Mr. Xie Mao is the founder of Baihe's "Lotus Seed Feast." Because he was born in Dongshan Township and his given name contains the character 'Mao', he named the restaurant Dong Mao. He started working as an apprentice in the culinary industry at the age of 13 and has been doing so for over 60 years. Now, his son (the second generation) continues the legacy. Sometimes, he tirelessly visits the restaurant to oversee quality control and hygiene. In 1994, the Baihe Township Farmers' Association, aiming to expand the Lotus Seed Feast, collaborated with the home economics class leader (his wife) and Dong Mao Restaurant's head chef (Mr. Xie Mao) to meticulously design over ten exquisite lotus seed banquet dishes. The event hosted 120 tables, serving over a thousand visitors from all over Taiwan who came to savor the feast. Baihe District's lotus seed harvesting season is from May to August. To promote local Baihe specialties, the Farmers' Association frequently holds lotus seed tasting events. Lotus seeds have high culinary value and can be used in sweet or savory dishes, served cold or hot. Since every part of the lotus plant is utilized—including lotus leaves, seeds, flowers, roots, and stems—delicious dishes can be created from them.
