The family, now in its third generation, still insists on using traditional sun-drying methods to make melon seeds, imbuing them with the aroma of sunshine after drying. First, the melon seeds are soaked for a whole day, stirred occasionally like a spa treatment. The next morning, they undergo a sauna, heated and cooked with licorice and soy sauce. After being taken out of the pot, they are then exposed to a sunbath. Finally, they are mixed with coconut oil, like applying makeup to the melon seeds. The entire production process takes one to two days. Low sugar, low salt, emphasis on ingredients: Melon seeds can also be made using salad oil and machine drying, but these melon seeds tend to have an oily smell and can cause a tingling sensation in the mouth. Bao Da Xiang insists on spa treatments, sun-drying, low sugar, and low salt, using more expensive soy sauce and coconut oil.
