This triggered Xiao A-yan's motivation to sell oyster buns and establish "Shuangyan Oyster Bun." This business has been running for more than 10 years, establishing a golden reputation for oyster buns. The production process of oyster buns is quite complex. First, shallots are stir-fried until fragrant and set aside. Then, small dried shrimp, chives, and glass noodles are added and mixed well to make the filling. When a customer orders, the dough is spread on a bowl, filled with the mixture, fresh oysters are added, an egg is cracked in, and then it's wrapped up. It's first lightly pan-fried on both sides to set its shape and prevent cracking, then transferred to a deep fryer until golden brown. The frying time depends entirely on experience and heat control. Once done, it's plated, cut into pieces, and ready to serve. Xiao A-yan comes to set up her stall early every morning, and often, customers are already lining up even before she's fully set up.
