In the 1990s, Tainan County Magistrate Su Huan-chih led the opposition to the Seventh Naphtha Cracker Project, successfully blocking its construction in the Qigu Lagoon and preserving a pristine area for Taiwan. That year, Wang Xian-min, who became well-known for following Su Huan-chih's footsteps in opposing the project and was interviewed on Wu Nien-jen's "Taiwan Nien-chen" program, was originally a fisherman who set up fixed nets (wang gou) in the Qigu Lagoon. Recognizing the tourism potential of the Qigu Lagoon after the opposition to the Seventh Naphtha Cracker Project, he set up a stall in front of the Longshan Temple in the village to sell oyster fritters and oyster vermicelli, creating a trend for tourists to visit Longshan, take a raft tour of the lagoon, and eat oyster fritters and oyster vermicelli. In 2015, to expand its business, Lejiao Wang Oyster Fritters and Oyster Vermicelli moved to its current location to continue operations. Lejiao Wang Oyster Fritters uses a batter made from soybean flour and wheat flour, mixed with water in a specific ratio. The filling consists of cabbage, chives, celery, and oysters. The oysters are local Longshan oysters, large and freshly shucked. The cabbage, chives, and celery are purchased, washed, chopped, and prepared daily, and any unused portions are discarded. The freshness is visible and can be tasted. Longshan Lejiao Wang Oyster Vermicelli comes in two varieties: soup and stir-fried.
