Sanguqiao Tou A-Guo Qigu Oyster Fritters. Huang Zheng-Guo, a native of Sangu, was originally a fisherman using fixed nets in Haigou and Wengou. After his fixed nets were dismantled by the government, he was assigned to be a Black-faced Spoonbill patrol officer. In 2003, he went to Xinshi to learn oyster fritter making techniques from an old lady selling them, and then he and his wife Yang Cai-xia set up stalls in Xinshi and Guiren respectively to sell oyster fritters. In view of the rise of tourism in Qigu, he moved back to his hometown Sanguqiao Tou Seafood Street in 2011 and opened "A-Guo Qigu Oyster Fritters" to continue his business. The batter for "A-Guo Qigu Oyster Fritters" is made of: soybean flour, wheat flour, and rice flour. The filling consists of: cabbage, chives, celery, green onions, and oysters. Huang Zheng-Guo emphasizes that besides fresh ingredients, controlling the heat is the most crucial factor for delicious oyster fritters. In addition to oyster fritters, "A-Guo Qigu Oyster Fritters" also sells fried wild shrimp, fried small fish, and fried small crabs. These ingredients are fresh seafood caught by Huang Zheng-Guo himself in Haigou using fixed nets and brought back early in the morning. The quantity is not fixed and they are not available every day, so they are often sold out shortly after the stall opens. Therefore, tourists who want to try them should come early!"
