'Jinhu Zongzi' is wrapped in bamboo leaves, uses long-grain glutinous rice, and the filling includes: dried shrimp, pickled mustard greens, shiitake mushrooms, peanuts, salted duck egg yolk, and pork. The preparation method is as follows: Pork shoulder is chopped into pieces, fried first, then simmered with oyster sauce, rice wine, and special seasonings (no artificial flavors) for 1 hour, and set aside. Dried shrimp are washed and fried, set aside; shiitake mushrooms are simmered in a special braising liquid until flavorful, set aside; peanuts are simmered in a special braising liquid until tender, set aside; glutinous rice is stir-fried with braising liquid, mixed with pickled mustard greens, peanuts, and dried shrimp, set aside. The braised pork, shiitake mushrooms, salted duck egg yolk, and glutinous rice are mixed together, then wrapped in bamboo leaves and cooked. Li Huijing states that the handling of new and old glutinous rice differs. New glutinous rice requires shorter soaking and cooking times, about half an hour to 55 minutes; old glutinous rice requires longer soaking and cooking times, about 1 hour to 65 minutes.
