Wang Yeh-ying (born in 1946), when her children were young, wanted to start a business to supplement the family income. She sold You Cong Guo (savory rice cake with fried shallots) and Xian Guo (savory rice cake) at the current location on Guangming Road. However, since You Cong Guo and Xian Guo were not suitable for vegetarians, and You Cong Guo was only bought during Chinese New Year, she switched to selling Jian Pan Guo (pan-fried rice cake). In 2013, due to her age, she handed over the business to her son Chen Kuo-shu (born in 1968) and daughter-in-law Yu Hsueh-hung. The method for making Qing Guo (plain rice cake) is as follows: The afternoon before, soak local rice for 2-3 hours, then grind it into a rice paste. Pour the rice paste into a lead bucket, filling it about 90% full, then add flour and seasonings and mix well. After boiling water in a large pot, pour in the rice paste, stir and smooth it with a spatula, then steam for 4 hours. Remove from the pot and let it cool. After 1 hour, brush with salad oil to prevent the surface of the Qing Guo from drying out and hardening. Once cooled, slice it. Since no preservatives are added, it cannot be stored for long, so after slicing, it is immediately put into the refrigerator for later use. Early the next morning, it is brought to the market. When a customer orders, oil is first added to a flat-bottomed pan, then the slices of Qing Guo are placed in the pan and fried until golden brown, then flipped and fried again until golden brown. It can then be removed from the pan and served with dipping sauce. The dipping sauce is made by boiling soy sauce and then adding minced garlic and mixing well. The soy sauce is boiled first to prevent it from being too salty.
