After his wife passed away, he retired early to raise his three children and opened a noodle stall to supplement his income. His daughter-in-law, Hou Li-yun (born 1966), helped with odd jobs and learned the trade after marrying into the family. Six months later, after mastering the cooking secrets, she took over the business. Kong Ji-jun still helps out at the stall every day. The preparation of Sanjia Village Plain Noodles involves three steps. First is making the topping: dried tofu is shredded, chopped, and stir-fried with lard until crispy, then set aside. Second is simmering the broth: pork bones are simmered for a long time, then set aside. Finally, the noodles are cooked. When a customer orders, the topping is scooped into a bowl, followed by the bone broth, and then the noodles are added before serving.
