The control of heat and timing, which affects the crispness and texture of the eel noodles, is Guo Qiting's specialty. Since the owner, Zhang Shuhua, is against killing, the eels purchased by Tucheng Guo are already processed. After the Ting Hsin toxic oil scandal broke out, Guo Qiting stopped using commercially available cooking oil and instead buys "rou neng" (pork fat) from the market to render his own oil at home.
