Yi-Wu Pan-Fried Buns use all-purpose flour, with fillings including pork, cabbage, spices, tofu skin, carrots, and shallots. The preparation method is as follows: Ferment the flour and set aside. Shred the pork and stir-fry with fried shallots, tofu skin, and spices until fragrant, then set aside. Blanch the cabbage and carrots, then stir-fry with fried shallots and seasonings until fragrant, and set aside. Take a small piece of fermented dough, flatten it, place the fragrant cabbage and shredded pork filling inside, wrap it up to form a pan-fried bun, and set aside. In the afternoon, the buns are brought to the stall. Heat a pan with a small amount of salad oil. Place the buns in the pan, flatten them with your hand, pour in a mixture of flour and water, and pan-fry for about 6 minutes. Flip them over and pan-fry for another 4 minutes. Remove from the pan and set aside. When a customer buys them, they are packed for takeout. Adding salad oil to the pan prevents the buns from sticking. The flour and water mixture is made by dissolving flour in water.
