In 1986, Huang Lijiao quit her job at the garment factory to take care of her elementary school children, so they wouldn't wander around after school. To supplement the family income, she urgently sought to develop a home-based side business. As her younger sister had participated in community cooking activities, Huang Lijiao learned how to make steamed buns and mantou from her sister. She then set up a stall at home to sell pan-fried buns, and soon added egg crepes and pan-fried dumplings. Initially, the pan-fried buns were filled with cabbage, minced pork, and fried shallots. One year, when the village temple Jiaying Temple held a religious ceremony, the entire village had to eat vegetarian. Since the meat-filled pan-fried buns couldn't be eaten, they were changed to only contain vegetables, a practice that continues to this day. Because making pan-fried buns was labor-intensive, his mother Su Xueyun (born 1930) helped with the wrapping, and his father Cai Dengxuan (born 1930) helped with the frying.
