The owner, Cai Yi-ying (born in 1978), learned the craft from his uncle by marriage, Zhou Wen-da, who founded "Old Zhou Ice Douhua" in 1990. In 2009, after learning the preparation methods from his uncle, Cai Yi-ying and his wife, Lin Yu-shan, with his uncle's permission, also started selling traditional handmade ice douhua under the "Old Zhou Ice Douhua" brand at various night markets. In addition to traditional white douhua, Old Zhou Ice Douhua has also developed flavors such as tangyuan (glutinous rice balls), taro balls, "fen-guo" (jelly-like dessert), sweet potato balls, aiyu jelly, red beans, mung beans, and soybeans (green beans). All douhua ingredients are homemade; no pre-made ingredients are purchased. Among these, the tangyuan douhua is the most popular, and Old Zhou Ice Douhua is known for its tangyuan douhua.
