When shrimp farmers from Pingtung came to the area to stock shrimp, they profited greatly, and everyone rushed to raise shrimp. Within a few years, the shrimp became diseased, and the shrimp bacteria in the fish ponds flowed into the river, polluting the environment. To this day, grass shrimp, tiger prawns, and white shrimp cannot be farmed here. Chen Yili eventually gave up setting up fish traps and switched to selling tofu pudding and cold drinks. Chen Yili sells two types of tofu pudding: traditional and three-color. The three-color tofu pudding comes in yellow, black, and white. The yellow is egg pudding, the black is chocolate pudding, and the white is milk pudding. This means the three-color tofu pudding is a combination of egg pudding, chocolate pudding, and milk pudding, hence it is also called three-color pudding tofu. The three-color tofu pudding offers a multi-layered texture that is sweet, bitter, smooth, and tender, loved by both adults and children. After selling for a period, Chen Yili discovered that northern tourists preferred traditional tofu pudding, while locals preferred the three-color tofu pudding and disliked the traditional one. He then stopped making traditional tofu pudding and specialized in selling the three-color version.
