Beimen Five Kings Bridge Roasted Sweet Potato. Tu Zhushan (born 1947), a native of Keliao, worked odd jobs at fish farms and also dried salt. After salt farming ceased, he went to Fengshan, Kaohsiung, to learn the technique of roasting sweet potatoes from his elder brother Tu Zhuqing. Upon mastering the skill, his elder brother gifted him a set of roasting ovens. Tu Zhushan set up a fixed stall in front of Yong'an Temple in Keliao. Later, he decided to sell in more distant locations. He would ride his "lizai ka" (a type of motorcycle) to the Xuejia market in the morning and to the current location at the Five Kings Bridge in the afternoon. As he got older, he stopped going to the Xuejia market and instead set up a regular stall at the northern end of the Five Kings Bridge. Tu Zhushan eats lunch at 10 AM. After his meal, he heads to his selling spot. When at home, Tu Zhushan roasts one batch of sweet potatoes. Upon arriving at his stall, he roasts another one or two batches while selling. He closes shop and goes home once they are sold, which could be around 2 PM or 3 PM. Tu Zhushan's stall hours are not fixed. He doesn't sell on rainy days, when the sweet potatoes are not good, or when he has other matters to attend to. To eat Tu Zhushan's roasted sweet potatoes, one truly needs a bit of luck. A lone "lizai ka" is stationed at the Five Kings Bridge, exposed to the elements. It's very hot in the scorching summer and very cold in the harsh winter...
